I know a lot of us are probably having the same problem here. I have a counter full of zucchini. Would everyone please leave their favorite thing to make with zucchini as a comment. I know all of you are fabulous bakers because I've tasted your food. I would love the ideas.

zucchini bread is very yummy!
Okay, I snooped in from Savannah's blog. But this is my favorite way to use zucchini. I also grate it in my lasagna and I have a tasty stuffed shells recipe that uses it too.
Chocolate Zucchini Bread
3 eggs
1 c sugar
1 c brown sugar
1 c oil
1 tsp vanilla
2 squares unsweetened chocolate, melted
2 c grated zucchini
2 1/4 c flour
1/4 tsp baking powder
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
Beat eggs until thick. Add sugars and oil and beat until smooth. Add melted chocolate, vanilla and zucchini: mix well. Mix dry ingredients together and combine with wet ingredients. Pour batter into 2 greased loaf pans and bake at 350 for 50-60 minutes.
We slice it up, brush with olive oil, sprinkle with parmesean and then broil it. SO GOOD!!
I also have a really yummy lo-cal soup recipe...call me if you want it. :)
Curry. You can throw a butt load of it in and make some fabulous Curry. Let me know if you need the receipe.
Jeanine, I need the recipe. I've never made curry in my life. I don't think I've ever even eaten curry. When have you eaten curry? What is curry?
I have a yummy receipe for a creamy soup, email me if you want it. You can also slice them up and bread them, and fry them up in a skillet, that's yummy too
Saute in butter or olive oil, then pour salsa over and sprinkle with cheese. Way better than you'd expect. I also have a fabulous Chocolate Zucchini Cake recipe that I'll e-mail....and Zucchini Cobbler that tastes like apple pie. Interested?
